My top tips on making this recipe successfully the first time round
Fry the bacon first and then remove it from the frying pan to fry the cabbage. This way you are not going to burn the bacon, whilst the cabbage is cooking and you’ll also utilise the bacon grease for flavouring the cabbage as it cooks.
Notes on Ingredients
Cabbage – I usually use white cabbage for this recipe, but you can also use red cabbage. The flavour will be slightly different (sweeter), but that’s not a bad thing!
Bacon – use whatever bacon you have and whatever you have left. The whole point of this recipe is to flavour the cabbage with the bacon. If you don’t have a whole pack of bacon slices, use whatever you have – the recipe will work just fine.

How to make fried bacon cabbage recipe
Remove the outer layers from the cabbage, cut out the hard core and slice thinly.
Slice the onion and garlic to very thin slices (you can also crush the garlic if you like)
Cut the bacon to smaller pieces.
Heat a large cast iron skillet, frying pan or a large saucepan on a medium-high heat.
Add the bacon pieces fry until done and crispy. Remove from the pan and keep the bacon grease.
Add the sliced onion and garlic and cook for about 3 minutes, until the onion is slightly see through and opaque in colour.
Add the cabbage and season with salt, pepper and mixed dried herbs. Mix everything together and fry on low to medium heat for about 20 minutes. Stir the cabbage from the bottom of the pan, so that it doesn’t brown too much.
When the cabbage is cooked through (check if it needs more than 20 minutes) add the bacon and warm through for another 5 minutes or so.
Serve as a side dish to roasted meats, sausages or even as a quick snack on it’s own.
How else you can make this recipe?
You can swap the bacon for some strong flavoured sausage or salami to flavour the cabbage. You can also use different types of herbs and spices to achieve different flavours. Smoked paprika, dried onion powder, white pepper, nutmeg are all great spices to add as a flavours.

This very much depends on how big cabbage you use, but 1/2 cabbage should be enough for 4 people as a side dish.
Can I scale up or down this recipe?
Yes, you can make more by doubling up the recipe or equally half it to make a smaller portion.
Can this recipe be made in advance?
This recipe can be easily made in advance up to 24 hrs and kept in the fridge until you need it. Warm it up in the saucepan on a low heat or use microwave to heat up again.
How to store this recipe
Once cooled down, keep the bacon cabbage in an airtight container in a fridge for 1-2 days maximum. You can also freeze this dish on the same day and keep in the freezer for 1-3 months.
How to re-heat bacon cabbage
Add a little bit of water to the bottom of the frying pan and add the cold bacon cabbage mix. Warm up on a very low heat for about 5 minutes, stirring as needed.
Alternatively, heat on full power in a microwave for 2-3 minutes, checking after 1 minute and stirring to make sure the bacon cabbage heats up evenly.

- 1 pack bacon rashes (slices) about 1/2 pound 250 grams pack or whatever you have
- 1 onion small
- 2 cloves garlic
- 2 teaspoons mixed dried herbs oregano, thyme, basil etc
