Grapefruit, Eggs, and Tons of Vegi’s

  • 1 grapefruit
  • 1 packet of Splenda (optional)
  • 1 egg
  • ½ c raw spinach
  • 1-2 sliced mushrooms
  • 3 tbsp. diced onions
  • ⅛ c 2% shredded cheddar cheese
  • cooking spray
  1. Spray a small frying pan with cooking spray.
  2. Place the spinach, mushrooms, and onions in the pan. Toss until they are at your desired tenderness.
  3. In a small dish beat the egg and pour it in to the pan.
  4. Let it cook with the vegetable mixture, sort of like an omelet. Just flipping instead of scrambling. Then put the cheese on top.
  5. Slice the grapefruit in half. Place on plate with eggs.
