Cast Iron Skillet Cornbread

Ingredients
  • 2 c self rising corn meal
  • 1 c skim milk
  • ⅓ c almond milk
  • ¼ c canola oil
  • 1 egg
  • ¼ c sugar replacement (stevia...your choice)
Instructions
  1. Preheat oven to 425.
  2. Using the oil of your choice, prepare your cast iron skillet.
  3. Put all ingredient in a large bowl.
  4. Whisk together.
  5. Continue whisking until batter is moist. Batter will be lumpy.
  6. Pour batter into cast iron skillet.
  7. Bake 20-25 min.
