Oven Toasted Irish Cheese Toast

  • 4 slices homemade bread, or your favorite bread
  • 2 eggs
  • 1-2 tsp English mustard, like Grey Poupon
  • 1 cup grated aged Irish cheese, like Kerrygold
  • Salt
  • Pepper
  1. Preheat oven to 450.
  2. Butter one side of the bread and place the butter side down on the baking sheet.
  3. Whisk the eggs in a bowl.
  4. Mix in the grated cheese and the mustard.
  5. Season with salt and pepper.
  6. Scoop the mixture with the fork and spread evenly across the slices of bread.
  7. Cook in the oven for about 10-15 minutes or until the eggs are puffy and the cheese toast is golden brown on top.
