Lemon Loaf with Lemon Drizzle
  • 1 yellow Jiffy cake mix
  • ¼ c lemon juice
  • ½ c warm water
  • 1 egg
  • For the drizzle topping:
  • ½ c lemon juice
  • ½ c sugar
  • 1 c powder sugar
  • lemon zest
  1. For the cake:
  2. Preheat oven to 350.
  3. Place the cake mix in a bowl.
  4. Add the lemon juice, warm water, and egg.
  5. Blend well.
  6. Place in a bread pan.
  7. Bake according to box directions. Cake is done with fork or knife comes out clean.
  8. For the drizzle:
  9. In a sauce pan over medium heat mix all ingredients.
  10. Mix until well blended and melty.
  11. After cake has cooled, drizzle over cake.
  12. You can also garnish with extra lemon zest.
