Super Simple Low Carb Pizza Omelet
  • 2 eggs
  • Salt
  • Pepper
  • ¼ c low sugar pizza sauce
  • ¼ c Italian blend cheese
  • Parsley
  1. In a small bowl whisk together two eggs.
  2. Add a dash of salt and pepper. Whisk again.
  3. Grease a small frying pan.
  4. Pour the eggs into the greased pan.
  5. Cook on low-medium heat.
  6. Using a spatula, after about 2 minutes, peek under to see if the egg is firm.
  7. Flip.
  8. Add sauce to one side of egg patty.
  9. Top with cheese.
  10. Fold other side over the top of the mixture.
  11. Plate.
  12. Sprinkle with cheese and garnish with parsley.
