Sriracha Poached Egg and Spinach
  • 2 cups raw spinach
  • 1 egg
  • 1 cup water
  • 1 TBSP Parmesan cheese
  • 1 tsp sriracha
  • ½ green bell pepper, sliced (optional)
  • ½ red bell pepper, sliced (optional)
  • salt
  • pepper
  1. In a non stick skillet add the spinach with a dash of salt and pepper.
  2. Cook on low heat.
  3. While the spinach is cooking bring 1 cup water to a boil in a small sauce pan.
  4. Stir the spinach so it does not burn. It doesn't take long to cook. You'll know it's done when the size is reduced and the leaves are shriveled.
  5. Set on a plate.
  6. Add Parmesan cheese.
  7. When you water boils carefully crack the egg and drop the insides into the boiling water.
  8. Immediately turn the heat down.
  9. It only takes about a minute to fully cook the eggs.
  10. Using a slotted spoon, scoop out the egg.
  11. Place the egg on top of the spinach.
  12. Add the sriracha.
  13. Pair with bell peppers or other vegetables.
