What could be easier than an omelette for breakfast to start the day! And to make things a little more interesting, why not add some vegetables and fresh herbs?
Not only your omelette will taste delicious, but it will also keep you nicely filled for longer.
I know that I don’t eat as much vegetables as I should, so adding some veggies to my breakfast is a great way to keep me topped up with vitamins and make me feel less guilty if I have a biscuit with my afternoon coffee!

With this recipe, anything goes! You can add pretty much any vegetables you have available, that’s suitable to be eaten raw or is already pre-cooked.

The only thing you need to bear in mind is that the omelette will be cooked within 5-8 minutes, so your vegetables need to be ready at the same time.
If they can’t be cooked or warmed up during that time, don’t add them in. For example if you want to add potatoes, cook them first (or use leftover potatoes) and then add them on the top of the omelette to warm up.
I usually just add anything I have around in the kitchen or fridge – any leftover vegetables are fine. What makes this pizza omelette quite special is the extra herbs, like the fresh basil leaves, which add a hint of fragrance and zinginess to the meal.

What to serve with your omelette
This pizza omelette is perfect as it is and if you are counting calories, you probably want to serve it as it is or with a simple side salat.

How to make easy pizza omelette with vegetables
In a small bowl, lightly beat the eggs with a pinch of freshly milled pepper and salt.
Heat frying pan to a medium heat (don’t make it too hot), add a bit of butter or sunflower oil and pour the egg mixture in.
Sprinkle with vegetables, which are cut up into smaller pieces.
Let to cook slowly and check the sides/underneath the omelette for colour. Once it’s light brown, check that the vegetables are cooked through.
Top with fresh basil leaves or chives or other fresh herbs.
Serve immediately ( with extra salad if you like)

- hand full of vegetables (red peppers, onions, olives, avocado, sweetcorn, cherry tomatoes) precooked or fresh
- pinch salt & pepper to season
- fresh basil leaves or chives
