This is like the easiest healthy and protein packed snack in the world! These quick microwave eggs are made in a mug and ready in under 2 minutes.
This recipe is also a perfect base for more complex recipes, for example eggs with grated zucchini and cheese.
I’ve started to make these a lot lately as I often can’t use the hob in my kitchen and the microwave is the only way to cook food. I like that every time, I mix something else in or top the eggs with leftover chicken or smoked salmon and that makes it into a more substantial meal. It certainly stops me from reaching out for a cake, when I’m hungry.

Quick Eggs in the Mug
Ingredients
- 2 eggs
- pinch of salt & pepper
- 1 teaspoon chopped chives or other herbs
- 1/4 teaspoon oil
Instructions
- Grease the mug firs with oil or butter.
- Crack two eggs into the mug and whisk with a fork.
- Season with a pinch of salt and pepper.
- Mix again and place in a microwave on full power for about 2 minutes.
- Check after 90 seconds or so and keep going for a little longer until the egg is firmer and slightly detached from the side of the mug.
- Sprinkle with chives or other herbs and serve straightaway.
